Blogmas Day Fourteen: Gingerbread Biscuits

It's only right to do some sort of Festive baking during the Christmas Season. For the past three years I have baked Gingerbread Biscuits, which is the definition of Christmas. The smell of Ginger consumes the house - adding to the Christmas Spirit. I mainly bake these for my Sister, who absolutely loves them during Christmas - especially topped with Icing Sugar Icing. 

 I follow the same recipe every year and basically make a huge mess of the kitchen. My favourite part is measuring out and then pouring into the large saucepan the golden syrup - I do also cheekily lick the spoon after pouring it into the saucepan. It smells amazing when your combine the sugars, butter and golden syrup. 
 Once the mixture is combined - I then have to chill it for 30 minutes - wrapped in cling film. As you have to melt sugars, butter and golden syrup - that part of the mixture is hot and once combined with the flour and spices - it has to be chilled in order for you to work with it. 
 Once chilled and rolled out - I cut out shapes of the gingerbread biscuits. This recipes is actually for a Gingerbread House - which means you get a lot of biscuits - depending how thick you roll them out to. This time around I got 34 biscuits out of it - other years I have gotten 72 biscuits! Once they have all be cut out and place onto baking sheets - I line mine with greaseproof paper - I bake them for 15 minutes, 180 Degree in a Fan Oven. I also choose circle shapes as they are easy to pile together for gifts etc. 

Once they have been baked and left to full go cold - if you apply icing to hot biscuits it will just slide off - it's time to make the icing for the top of the biscuits. I like to do the icing quite thick - therefore there is no science behind my measurements - I basically sift icing sugar into a bowl and then add cold water to it and mix it together with a wooden spoon. I then applied a thick layer to the top of each biscuit with a palette knife. 


And there you go - simple gingerbread biscuits that my sister will love and I love to bake for her every single year. The recipes can be found in a cook book called Bake by Rachel Allen.
